Hi,
I would have to say the stainless steel would be the better option. It shouldn't corrode so there should be no contamination of the water.
Plastic is never a good idea as a container for liquids you're going to drink. Soft plastics are a particular problem and any plastic my leech chemicals into the liquid if it is heated e.g. by sunlight.
Does anybody have specific experience with water tanks for wells?

Hi There,
While I cant offer any specifics on water storage tanks. My personal experience (so not experienced by everyone) is a severe sensitivity to nickel more sensitive than formaldehyde!. I only found out by accident following the result on a lymphrocite sensitivity test.I had subconscioulsy been avoiding nickel for some time. Never touching coins or wearing costume jewellry because I couldnt stand the smell.
I use glass for water storage and glass pans for cooking and below is a link detailing glass lined tanks.

Also you could check if the stainless steel is surgical standard I believe this does not contain any other alloys like commercial stainless steel does. Might be worth an ask.
